How to store whole herbs so they last
A pouch lasts about fifty cups. Here is how to make the fiftieth taste like the first.
01 The four enemies
Light fades the oils in cardamom and mint. Air slowly carries aroma away. Heat speeds both up. Moisture is the one that actually spoils a blend, by letting mould in. Our pouch blocks light and reseals, which handles three of the four; moisture is on you.
02 The rules
Keep the pouch closed between cups, away from the stove and the window. Use a dry spoon every time. Do not store it in the fridge, where condensation forms each time it comes out. A shelf in a cupboard is the right place, exactly where your grandmother kept hers.
03 How long
Unopened, the blends keep for a year from packing. Opened, aim to finish within three months. The date and batch number are on the back of every pouch.
